What is the difference between grain fed and grass fed beef?

A common question people have about beef is, what is the difference between grass fed and grain fed beef? Well, grain fed beef is more tender and grass fed beef has more flavour, so what you need is a mix of the two. If you want tender, flavoursome beef it has to be grass fed and grain finished, that way it will have the flavour along with being tender!

Recipe idea - Chilli Chicken

RECIPE IDEA
CHILLI CHICKEN
500g chicken breast or thigh fillets thinly sliced
½ cup blanched almonds
1 red capsicum thinly sliced
1 onion cut into wedges
1 zucchini grated
2 tablespoons sweet chilli sauce
2 tablespoons soy sauce
2 tablespoons oyster sauce
Olive oil
1cup rice

1.Heat olive oil in a large fry pan, add chicken and fry until golden brown
2. Add capsicum, onion and zucchini, stir fry for 2 minutes or until tender
3. Add almonds, and the 3 sauces until heated through
4. Serve with boiled rice

Recipe Idea - Lamb and Mango Salad

Perfect for the warmer weather
LAMB AND MANGO SALAD
4 lamb steaks
Olive oil
1 Tablespoon chilli sauce
2 Tablespoons lime juice
1 Tablespoon sesame oil
2 tablespoons chopped coriander
100g salad leaves
1 punnet cherry tomatoes (halved)
1 red onion (sliced)
2 mangoes cut into cubes

1. Heat oil in fry pan, fry lamb steaks for 2-3 minutes, it should still be pale pink in the centre
2. Let cool for 5 minutes and slice thinly
3. Combine all the sauces and toss the lamb in the mixture
4. Add lamb to salad ingredients and toss.

local butcher often LESS expensive than big chains

We all know the quality of meat from your local butcher is always much higher than that of Woolworths and Coles but did you know that the price is often higher at these large chains? Costco has recently opened a few stores here in Australia promising quality products for cheaper prices but you have to pay a $60 annual membership to get these discounts. A Costco staff member told the sunday telegraph that their meat, among other products, is actually more expensive than the local butcher!! Go figure!

Tips for the best pork crackling

There's nothing like an awesome pork roast with crunchy crackling to go with it! Here are some tips to get the crackling just right:
1. score the skin
2. rub plenty of salt into the skin (some people also add lemon juice or canola oil, but using just salt works fine)
3. Leave uncovered in the fridge overnight
4. Take it out of the fridge 3 hours before cooking to ensure it is at room temperature before placing it in the oven
5. Turn the oven on as hot as it goes before putting the pork in
6. Cook on high for 30 minutes
7. Turn the oven down to 170 degrees celsius for the remainder of the cooking time (remember 30 minutes for every 500 grams)

Recipe idea - Lazy Day Chicken

RECIPE IDEA
LAZY DAY CHICKEN
I kg chicken pieces (breast/thigh fillets)
Carton sour cream
Can of cream of chicken soup
1 packet onion soup mix
½ cup of water
Packet of crisp fried noodles

1. Place chicken pieces into oven proof dish
2. Combine sour cream, chicken soup, onion soup and water in a bowl.
3. Pour over chicken and bake for 1 hour on 180 degrees Celsius or until chicken is tender.
4. Sprinkle crisp noodles over chicken 10 minutes before end of cooking time, leave uncovered.
