HEARTY BEEF PIE
Olive oil
500g premium beef mince
1 carrot grated
1 small onion diced
2 Tablespoons fresh parsley
1 cup crushed tomatoes
120 g butter
½ cup plain flour
2 cups beef stock
1 Tablespoon Worcestershire sauce
Cracked pepper
1 sheet puff pastry
1 sheet short crust pastry
¼ cup milk for brushing top of pie
1. Preheat oven to 180 degrees Celsius and grease a 20cm pie dish
2. Heat olive oil in a large non stick frying pan, cook mince over a medium heat for 5 minutes. Add onion and carrot, cook until soft. Add crushed tomatoes. Set aside
3. Slowly melt butter in a large saucepan then stir in flour with a wooden spoon until the mixture turns a golden brown.
4. Whisk in stock, Worcestershire sauce, parsley and pepper to make a smooth brown sauce. Reduce heat and allow sauce to thicken.
5. Add the sauce mixture to the mince and vegetables and cook for 5 minutes.
6. Place a sheet of short crust pastry in the bottom of the pie dish, fill with the mince mixture. Place a sheet of puff pastry on the top. Use a fork to press down the edges.7. Brush the top of the pie with milk. Bake for 30 minutes.
